Healthy Vegan Chickpea Chocolate Chip Cookie Recipe
If you have a severe sweet tooth and are tired of feeling guilty and sluggish after enjoying those 500 calorie grocery store cookies that have 40g worth of sugar and loads of fat, I can say that this recipe will officially curb those sweet tooth cravings!
As I have grown to have a better relationship with food, I have realized that I have to make some modifications to my everyday favourites. Even though I never thought in a million years that I would be adding chickpeas to my chocolate chip cookies, I decided to give it a try. To my surprise, it was everything I had hoped for. You can't taste the chickpeas at all, and it gives it a beautiful texture. Basically, it was a sweet soft dreamy chocolate chip filled goodness sent down straight by the heaven gods into my hands. That might be just a tad bit of an exaggeration, but holy shmokes, the fact that these cookies are dairy-free, egg-free, and grain-free (gluten-free), it was mind-blowingly delicious. So, here is the recipe:
Healthy Vegan Chickpea Chocolate Chip Cookies
〰 Makes 12 medium-sized cookies 〰
Prep Time - 10 min / Cook Time - 20 min / Total Time - 30 min
Ingredients:
1 1/2 cups cooked chickpeas, or 1 (15 oz.) can, drained and rinsed
1 ripe banana
1/2 cup oatmeal
1/2 cup brown sugar or maple syrup
1/2 cup nut butter (peanut, almond, etc.)
1 tablespoon vanilla extract
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup semi-sweet chocolate chips
Note: I personally usually use peanut butter for the nut butter and use maple syrup if I have any on hand. If you end up using brown sugar instead of the maple syrup, you might not get the consistency you want or might run into problems with the pulsing process as your dough might be too thick. In this case, you can go ahead and thin it out by adding 2 tablespoons of any milk alternative (almond, soy, oat, etc.) to the mix.
Directions:
Preheat the oven to 375°F and line a baking sheet with parchment paper.
Add everything except the semi-sweet chocolate chips and salt into a blender (that has pulsing capabilities) or food processor, and process the cookie dough until relatively smooth.
Pour the mixture in a large bowl and fold in the semi-sweet chocolate chips.
Scoop a heaping tablespoon onto the parchment paper and mould it into the shape you desire your cookies to be. You can either do this with your hands or use two spoons to shape the cookies gently. Repeat this process until you have filled your tray.
Add some extra chocolate chips on top for design, if you have some leftover. Then, sprinkle the salt evenly between all the cookies. The salt will help enhance the flavour of the cookies.
Bake for 20 minutes or until the top begins to crack and the sides are golden brown. Set aside to cool before serving.
